Chicken and Broccoli Phyllo Rolls

A good option for a hearty homemade pie. Phyllo pastry is lower in fat and calories than puff pastry which has fat, usually butter, folded multiple times into the dough to create layers of butter and dough making it a higher calorie choice.

  • 200g leeks

  • ½ Broccoli floret

  • 4 chicken breasts, precooked and shredded

  • ½ cup of plain yoghurt

  • Handful of mint and dill

  • 8 sheets of phyllo pastry

  • Oil for spreading

  • Handful of seeds (pumpkin, sesame, sunflower seeds) (optional)

Sauté leeks.

Steam broccoli in microwave for 2-3 minutes

Mix leeks, broccoli, chicken, yoghurt, mint and dill

Brush two sheets of pastry with oil and layer them

Place ¼ of the mixture in one corner of the pastry and roll up diagonally; tucking the sides as you go

Repeat to make four pies

Sprinkle with seeds

Bake for 15-20 min at 180 degrees
